The name comes from the space's own history; the building once operated as a bootleg apothecary, and Rolfe leaned into that origin rather than ignoring it. He came up through wine before cutting his teeth on Boston's cocktail scene at Wink & Nod and Parla, and that sommelier-trained palate shows in an approach built around housemade ingredients and rotating menus that refresh roughly every two months. This isn't a lounge that rotates a seasonal drink or two — the whole program turns over, organized in chapters. In the North End, a neighborhood better known for red-sauce institutions and tourist-facing wine bars, Farmacia is operating in a different register entirely. The cocktail menu at any given moment will look nothing like it did two months prior, which is both the appeal and the challenge.
