Coda Restaurant Group — the team behind SRV, The Salty Pig, and Baleia — built the space to hold multiple identities at once, and remarkably, it does. By day it runs counter-service, turning out pastries and sandwiches you can take to the bocce court out back. By night it shifts into a proper sit-down restaurant anchored by pasta and wood-fired pizza from a grand blue-tiled oven. Executive Chef Andrew Hebert, who came to Gufo directly from sister restaurant The Salty Pig, shapes the kind of Italian menu that leans into technique without distancing itself from pleasure — four menu sections running from snacks through pasta and 12-to-14-inch pies. The two dishes that have defined Gufo's early reputation say a lot about what Hebert is after. The Squid Ink Bucatini with Baby Clams and 'Nduja Butter is the kitchen's clearest statement: a pasta that draws on the Southern Italian tradition of pairing briny shellfish with fat-rich, spiced cured meat, here rendered in a deeply colored, aggressively savory sauce that diners consistently point to as the reason to return. It's a dish where the 'nduja does real work rather than acting as a garnish.
