This is Uyghur cooking — Central Asia by way of the Silk Road, rougher and more interesting than most of what passes for "global" cuisine in Ottawa — and the room is built around feeding you well, not staging your photos. The tradition itself is the draw: hand-pulled noodles, cumin-forward lamb, and a culinary lineage that carries the overlapping influence of Chinese, Turkic, and Persian kitchens in a single bowl. That's a legitimately unusual thing to find at price level one in this city, and the restaurant's following reflects it. The menu centers on a few dishes that have developed real reputations. The Big Plate Chicken is widely cited as the anchor — a bone-in braise with potatoes and bell peppers, reportedly dark with soy and fragrant with star anise and dried chili, served over hand-pulled noodles that absorb the sauce as the dish sits.
