“The dry-aged ribeye at Champions Austin Restaurant & Bar is the real reason to go — 28-day dry age, cooked to order and rested properly — the price is justified by the depth of flavour the process extracts. Everything else is a bonus. The price point makes returning easy, which is exactly the point. Walk-ins are generally fine, though weekend brunch lines move quickly.”
