Holdfast Specialty Seafood Co. arrived in Allston in November 2025 with a concept that sounds simple until you look at who's behind it: two veterans of O Ya, Boston's revered Japanese omakase institution — Paolini, who ran the kitchen at Sarma and rose to sous chef at O Ya, and Gould, who spent nine years as O Ya's chef de cuisine. That background matters precisely because Holdfast isn't trying to be O Ya. It's a 20-seat bar built around fried seafood and cold rolls, gleaming-white tiled with a room-wrapping bar and an eight-seat black walnut communal table. The name is a nautical term for anchoring down in a storm, and there's something apt about that: these are chefs who could open anywhere doing anything, and they chose Allston and clam rolls. The menu centers on three signature rolls that have drawn the most attention from diners and critics alike. The Cold Lobster Bisque Roll is the showpiece — knuckle and claw meat, with a bisque reduction folded into an aioli and brightened with citrus. The Oyster Roll leans into the kitchen's Japanese fluency with a chili aioli and pickled onions, the whole thing grounded by a brown-buttered bun.
