Sam Giarratano built this place with his wife Rosemary and their two sons Greg and Bryan, and nearly two decades later it reads less like a restaurant than a neighborhood institution with a personality disorder in the best possible sense: a wall of fame covered in artwork by local kids on one side, a wall of shame featuring mug shots of customers who ordered ketchup on the other. That wall of shame is not a bit. It is a theological position. The menu centers on Vienna Beef, which at this price point is the only correct answer. The Flubby is the canonical version — the full Chicago-style treatment with mustard, onions, tomatoes, relish, cucumber, pickle, sport peppers, and celery salt, served with fries. The Chubby upgrades to a quarter-pound Vienna dog grilled rather than steamed, with the same traditional trimmings, and this is the one diners consistently point to when they talk about the place. The Coney goes a different direction entirely: chili, mustard, onions, no Chicago-style pretense. That range matters — it acknowledges the tradition while not being imprisoned by it.
