Lardon makes a sound case for the all-day room done with intent. The space—a 110-year-old building stripped to exposed brick and original wood joists, antique honeycomb tile underfoot—earns its character without trading on nostalgia. The window onto the charcuterie cave isn't decoration; rows of soppressata, finocchiona and Spanish chorizo cure in plain view, and Chef Chris Thompson's whole-animal program, sourced across the Midwest, is the genuine through-line from morning espresso to evening bistro. The Reuben, built on house-made pastrami with goat gouda and housemade sauerkraut, is the kitchen's most consistent performer, and rightly so. The truffled lardo with rosemary and the Italiano sandwich both reward attention. The four-course prix fixe at $50, Wednesday through Saturday, is fair for what arrives—four Bib Gourmand nods running 2022 through 2025 are not handed out casually. This is not a special-occasion destination, nor does it pretend to be. It's a neighborhood salumeria that takes its curing seriously and charges accordingly. On those terms, it delivers.
