Mako asks $215 for B.K. Park's omakase—up to 23 pieces across a sushi bar seating just twelve. The question is whether the precision justifies the cheque, and on the evidence here it largely does. Park, a fixture of Chicago's sushi scene since his Mirai days and later Arami and Juno, opened this West Loop room in 2019 and collected a Michelin star within six months. Phil Vettel's four-star Tribune verdict called it the city's best sushi experience and "awfully close" to perfect—high praise that the kitchen's range backs up. The cooked dishes are where Park shows ambition beyond the bar: braised abalone with liver purée, black cod under burnt scallion ponzu, a chawanmushi stocked with mushroom and crab. The hotate—Hokkaido scallop with shiso butter and granny smith apple—reads like a thesis on balance. The 22-seat space, all warm woods and bronze tones, suits the intimacy the format demands. This is a special-occasion room that earns the occasion rather than coasting on its star.
