There's no signage on Milwaukee Avenue. You descend into the lower level of Michelin-recognized Perilla Fare and find a bar where the entire point is temaki made to order and eaten immediately — before the nori loses its crackle, before the rice cools. Whang's twelve years at Girl & the Goat give the kitchen serious pedigree, but Noriko isn't trading on fine-dining credentials.
