Regalia isn't trying to be the flashiest thing on the North Side. What legendary Chicago restaurateur Dejan has built at 5959 N. Sheridan in Edgewater is something more specific and harder to pull off: a bar-forward room that takes its food seriously, anchored in Italian tradition but not imprisoned by it. Chef Jose Marquez is the skillful hand executing the classics here, and the concept is clear — familiar, well-loved Italian preparations made with ingredients that earn the price of admission. At a price point that keeps things genuinely accessible, this is the kind of Edgewater spot that fills a real neighborhood need: somewhere you can pull up at the bar solo with a glass of wine and eat as well as you would somewhere twice the cost. The menu centers on Italian-rooted dishes that Marquez executes with confidence and some real invention. The crispy bone-in veal parmigiana is what The Infatuation flagged as the thing to order — it's the kitchen's signature statement, a dish that lives or dies on technique and sourcing, and by all accounts it delivers.
