Dustin Lancaster, who came up working Café Stella in Silver Lake before launching this place nearly 15 years ago on the Los Feliz edge of Hollywood Boulevard, built Covell around a deliberately listless wine program: no menu, no intimidating binders, just knowledgeable people who'll actually listen when you describe what you want. That approach — radical in its simplicity, quietly confident in its execution — changed the register of the LA wine bar conversation. The room reinforces it: pages torn from old encyclopedias wallpaper the walls, vintage cameras occupy small shelves, and the whole space leans into a film-noir moodiness that feels specific rather than assembled. Lancaster has since expanded the footprint with Sidebar, a private space upstairs that fits up to 50 for tastings or parties, and nine apartment suites above the bar — a layered, eccentric little compound on what was, when Covell opened, a pretty sleepy block.
