The Garcia Calvo siblings — María, Ramon, and Santiago — are Argentine by origin, but the project they built here is rooted in Nikkei, the Peruvian-Japanese culinary tradition that emerged from Japanese immigration to Peru in the late 19th century and has been producing some of the most electric cooking in the Western Hemisphere ever since. Before bringing this concept to Miami in early 2024, they had already run three successful restaurants in Buenos Aires. This is their first international outpost, and they've planted it in one of Miami's quieter, more residential pockets — not South Beach, not Wynwood — which signals something about their priorities.
