The room is reported to be a composed one, navy walls and leather banquettes, the kind of space that signals the Bimm siblings and their cousin Sophie Bertrand are running a kitchen with a point of view rather than a concept. Alex Bimm trained at Les Fougères and Whalesbone, two Ottawa rooms that treat sourcing as seriously as technique, and what he reportedly brought to this address is a dry-aging program for fish — a patient, exacting process that concentrates flavour before a plate is even assembled. That this is happening at an accessible price point in Chinatown is, by most accounts, the most interesting thing Ottawa's dining scene has produced in some time.
