Researched recommendation

Thirty years of pho tradition is not a marketing line — it's a specific kind of pressure, and Pho Thu Do on Somerset Street West appears to be carrying it seriously. The restaurant has passed to a young couple who inherited both the name and the expectation, and by consistent accounts from regulars, the kitchen has not coasted on that legacy. This is a neighbourhood room in the plainest, most reliable sense: open until midnight on weekdays, priced at the lower end of the scale, and oriented toward the kind of crowd that comes back on a Tuesday because they already know what they want. Ottawa's Vietnamese community has a long memory for this sort of place, and Pho Thu Do has kept it.The menu centers on two pho builds that diners consistently point to as the kitchen's core argument. The Pho Dac Biet — the combination special — is reportedly where the broth's depth is most legible, a stock that takes time rather than shortcuts to develop. The Pho Tai Chin Sach Bo Vien extends that same base with a wider range of beef: rare slices, tendon, and meatballs, a configuration that rewards the diner who lets the bowl rest before reaching for condiments. The Com Tam offers a different register entirely — broken rice with grilled pork, a format known for its caramelized, drier character that has made it a lunch staple across Vietnamese cooking for good reason. The practical detail worth knowing: the Bun Dau Mam Tom does not appear on the standard menu and is worth asking your server about directly. It has developed a word-of-mouth following among regulars, the kind of order that distinguishes repeat visitors. Come on a weeknight; the room is reportedly quieter and more relaxed after nine, and the kitchen runs the full distance to midnight. Start with the Pho Dac Biet.
