Researched recommendation

ByWard Market has no shortage of Vietnamese spots, but ParLê by Viet Fresh at 313 Dalhousie occupies a structurally distinct position in that landscape — it is Ottawa's only halal-certified Vietnamese restaurant, which means it has opened the door to a dining public that has historically been excluded from the pho conversation entirely. That fact alone would be worth noting. What makes it more than a footnote is the evident ambition behind the room. Co-owner David Wen and three partners set out to build a newer-generation Vietnamese experience — lighter, fresher, deliberately approachable — and the space reflects that intention. Murals by Ottawa-based African artist Alan Andre give the interior a warmth that reads as purposeful rather than incidental, and a neon sign at the rear reading 'Feed Me Banh Mi and Make Me Happy' signals the restaurant's register before anyone has touched a menu. The kitchen's anchor is the Combination Pho — beef tendon, tripe, brisket, and flank in a single bowl. That particular build is the kind that exposes a broth immediately; there is no straightforward cut to lean on when four different textures and cook times are in play. Diners consistently return for it, which tends to say more than award language. The Grilled Pork Vermicelli Bowl is known for seasoning that reads as considered rather than heavy-handed — reportedly the kind of dish that appears simple until the pork pulls focus. The banh mi program operates on a rotating daily format, with Coconut Braised Pork Belly appearing on Sundays and Grilled Beef on Mondays — a detail that suggests genuine kitchen planning rather than a static menu left to coast. The practical case for ParLê is partly about timing. Late-night hours extending to midnight on weekdays and later on weekends make it one of very few kitchens in ByWard serving serious Vietnamese food when the neighbourhood actually wants it. Plan around Sunday if the Coconut Braised Pork Belly Banh Mi is your target — it is the most telling item on the rotating program. For a full meal, the Combination Pho is the logical anchor.
