Folke arrived in Kitsilano in 2023 with a specific argument: that vegetable-forward cooking deserves the same intellectual seriousness as any Michelin-starred tasting menu, and that a restaurant can run without a tipping model and still treat its staff well. Executive chef Colin Uyeda's résumé — Pilgrimme on Galiano Island, three-Michelin-starred RyuGin in Tokyo, the late Relae in Copenhagen — isn't name-dropping for its own sake; it explains why the kitchen treats fermentation, umami-building, and cross-cultural technique as tools rather than gimmicks. Michelin noticed in 2023. Canada's best new restaurant lists noticed too, landing Folke at number seven nationally and naming co-owners Uyeda and pastry chef Priscilla Deo "Trailblazers of the Year." There's a small ceremony to eating here that most Vancouver hot pot rooms skip: the cloisonné copper pots, the charcoal glowing underneath, the sense that dinner is an event rather than a transaction.
