The reference point is Pondicherry, the former French colonial enclave in South India, and the chef behind the concept — Ashwani Dabas — is the right person to make that case. Raised in New Delhi, trained in French technique at Niagara College, Dabas has been cooking toward this restaurant his whole career. The room reflects the thesis: three distinct sections, including an indoor veranda that reportedly reads somewhere between a Left Bank brasserie and a South Indian porch. This is not a room performing atmosphere. It has a point of view. The menu works dish by dish to back that up. The Fig & Goat Cheese Samosa is built on filo rather than standard dough — curry-leaf brown butter, goat cheese and fig inside, mint chutney and crème fraîche alongside — and is consistently described as the kind of thing that explains the whole concept in one bite. The Peya's Cornish Hen, brined and marinated for 72 hours before roasting, comes in a red-pepper gravy with house-made garlic naan; Dabas himself has framed it as his take on butter chicken, with the hen doing work a commodity breast simply cannot. The Local Mussels in Tomato Rasam bring South Indian broth technique into classic moule territory, and the Chai Tea Crème Brûlée has developed a reputation strong enough that skipping it is apparently something diners regret. The Chettinad Pepper Steak rounds out the menu as a dish worth building a return visit around. The bar program is run by Chris Enns, World Class Bartender 2018, so cocktails are not incidental here. Peya is open Tuesday through Sunday from 3pm, and the early-dinner window books up — reserve ahead and specifically request the veranda section. At this price point, ordering widely across the table is the obvious move.

There's a small ceremony to eating here that most Vancouver hot pot rooms skip: the cloisonné copper pots, the charcoal glowing underneath, the sense that dinner is an event rather than a transaction.
