Conner O'Byrne — a Publican and La Josie bartender who decided to open a restaurant instead of just drink at them — built a 45-seat room on West Chicago Ave that runs on the radical premise that the Great Lakes region already has everything you need. Over 90% of the drinks program pulls from states bordering the Great Lakes. The five-course tasting menu clocks in at $75. There's a boutique bottle shop and café up front so you can browse regional cider while you wait for your table. This is the kind of place that makes the broader 'local sourcing' crowd look like they're just doing it for the Instagram caption. Executive chef John Dahlstrom (BLVD, Table, Donkey and Stick) is the engine behind the kitchen's specificity. The walleye arrives with collards swimming in a rich chicken stock — a dish that sounds humble until you taste how the broth tightens everything into something almost oceanic. The smoke-kissed chicken with giardiniera-infused baked beans is what happens when someone actually understands that giardiniera isn't a condiment, it's a flavor philosophy. Then there are the desserts, which hit different: the Grasshopper Cake, the Paw Noffee Pie, and a Sunchoke Mont Blanc that commits fully to the strangeness of its own premise. The Nymphs Negroni is exactly the kind of bar-brained cocktail you'd expect from a founder who came up on Publican's speed rail. The move is the wine pairing — $35 on top of a $75 tasting menu is genuinely fair, and at those prices you should go all in rather than cherry-pick. Sit as far from the entrance as you can to get out of the café foot traffic. Come Thursday or Friday evening when the kitchen is sharp and the room has real momentum. Book the tasting menu ahead; the à la carte lamb sausage breakfast sandwich at the café opening slot disappears fast and deserves its own trip.
