The result is a daytime spot built around real craft — bread baked on the premises, meats cured and smoked in-house — with a social mission baked in alongside it. Bancroft's hot sauce program connects directly to Co-op Sauce & Co-op Image, a not-for-profit he founded to teach Chicago public school kids how to make savory and spicy sauces.
