Chef Javier Blanc — who took second place at the 62nd Concurs Internacional de Paella Valenciana de Sueca, the world's most serious paella competition — opened this 25-seat room at 2211 Manitoba St alongside culinary director Elea Blasco, and the restaurant holds the Restaurants from Spain Certification, one of very few in Canada to do so. That credentialing isn't incidental: it signals a kitchen that answers to a tradition, not a trend. The room itself — limewashed walls, unstained wood tables, dim golden light in a converted heritage house — seats barely two dozen people and requires climbing a flight of stairs to reach. At that scale, every reservation is a commitment on both sides. The menu centers on preparations that demand patience and technique. The Valenciana Paella is the anchor — built on house-made sofrito, pimentón, and saffron using the traditional Valencian method, and the dish Blanc's international reputation rests on. Those who come specifically for it are vindicated: it's the reason the Sueca citation matters in a dining room context. The Mariscos Fideuà makes the strongest case for ordering beyond the paella — thin noodles cooked in seafood stock with prawns, squid, scallops, mussels, clams, and red pepper, following the same Valencian base as the rice dishes.
