Master Distiller Yoo's family has been fermenting fresh, unpasteurized makgeolli without aspartame and distributing it to restaurants across the region for years; Vanmak is where you go to drink it at the source, alongside the bar snacks that Korean rice wine has always been meant to accompany. If you're coming for a conventional sit-down Korean dinner, recalibrate. If you're coming to understand what makgeolli tastes like when it's made by people who have staked a decade on the craft — including a genuinely unusual slushy format — this is where Vancouver currently does that. The food menu is intentional and short, which is exactly right for the concept.
