Chef Shin doesn't pre-cut or pre-cook a single strand; the noodle-making begins when you walk through the door, using a grandmother's recipe recalibrated with Canadian flour. That commitment shows in the bowl. The Niku Udon arrives with thick brisket slices in a premium dashi that tastes clarified, not merely salty. The Kitsune, with its seasoned fried tofu and pink-swirl narutomaki, is quieter but no less exact. For something bolder, the Spicy Tanton braises pork belly in a spiced chicken-and-dashi broth, while the brothless MazeMentai layers pollock roe, poached egg, and pickled plum into something genuinely composed. No reservations, a light-flooded room, and bowls that hover around fifteen to twenty dollars — the 2025 Bib Gourmand nod is earned rather than flattering. Two of us left, with sides, near fifty-two dollars before tip. That is not a special-occasion cheque, but the cooking has the discipline of one. The occasion here is the noodle itself.
