That's not arrogance — it's the logic of a kitchen built around precision. Chef Jin brings over 30 years of experience across Japan and France, and the restaurant's entire architecture, both physical and culinary, is designed to make Edomae tradition legible in his own voice. A Michelin recommendation and a finalist nod at the 2023 Restaurant Awards didn't manufacture Sushi Jin's reputation; they confirmed what a small, loyal circle of diners at 750 Nelson Street had already figured out. The menu centers on luxury ingredients handled with restraint and intention. The live lobster sashimi — finished with osetra caviar, olive oil, a thick savory soy, and fresh satsuma rind — is one of the clearest expressions of Chef Jin's French-Japanese synthesis: an Edomae foundation with a European sensibility applied without excess.
