By night, Calen Knauf's room does its best trick: the bright daytime cafe recedes and something calmer takes its place, full but never loud, the kind of low hum that lets two people actually hear each other. Lina Caschetto and Neil Hillbrandt (late of Bar Gobo) keep the menu short and rotating, leaning on French and British bones. What lands feels considered without being fussy — lamb neck tortellini in a clear parmesan brodo cut with minty green sauce; beef tartare with blue cheese cream and pickled grapes; mussels in fermented tomato dashi; salt-baked celeriac against mushroom XO. Trim and offcuts become stocks, so nothing's wasted. It's a share-plate bistro that holds its shape across an evening — genuinely good for a date, better still if you like a room that shifts gears as the light drops.
