The 2021 project from Marcelo Ramirez (La Taqueria) and Tara Davies (once of Toronto's Bar Raval) has settled into a room built for Vancouver's grey months without surrendering the noise and warmth that made it worth finding. Three consecutive Michelin Bib Gourmands (2022–2024) suggest the kitchen, now under Maria Ponce, knows what it's doing, and the plates bear that out. The tacos dorados de birria arrive crisp and properly balanced with salsa verde and queso fresco; the tostada de pulpo — octopus, salsa macha, furikake — earns its billing. Callos en aguachile verde, Hokkaido scallops with ginger oil, shows restraint. Davies's agave-focused bar remains the draw: the Califa reconstructs an al pastor taco in liquid, and the low-waste ethic feels genuine rather than performative. Finish with the tres leches, spiced with lavender and cardamom. At $80–90 per person, this isn't cheap for a bar, but the cooking and the drinking justify the outing. A room that has grown into itself.
